1) What is Gluten?
Gluten is the protein found in wheat, rye, barley or in any derivative of wheat.

3) How do you determine that the products in your book are “gluten-free”?

The information was received from product manufacturers and major supermarkets via internet, e-mail, phone, mail or product labels. The Food and Drug Administration (FDA) has proposed to define the term "gluten-free" as < 20 parts per million (ppm) gluten. This regulation was scheduled to be issued by August of 2008. Some food manufacturers have already begun testing their products for the presence of gluten. Those products that have not passed the test of < 20 ppm have been excluded from this book. Currently not all companies test their products, therefore, we cannot guarantee that all the products listed in our book are < 20 ppm gluten. Those products that have been manufactured in the same facility as gluten, but indicate that they thoroughly wash their lines between products have been included. We have tried our best not to include products from manufacturers that do not take measures to prevent cross-contamination.

4) What is the difference between the 2008/2009 Edition and the NEW 2009/2010 Edition?
- Every product in the NEW 2009/2010 Edition has been re-verified to be gluten-free.
